GALLERY OF FLAVOURS
This collection showcases the heart of my cooking: a blend of cultures, traditions, and personal heritage. At its core is the rich food culture of Northern Mindanao, where I grew up enjoying flavors that are bold, rustic, and deeply tied to the land and sea. Dishes like savory adobo, coconut-based stews, and charcoal-grilled specialties reflect the soul of Filipino cuisine from my region.
Alongside these roots, my gallery also explores the vibrant spices of Southeast Asia, the comforting warmth of Indian cuisine, and the hearty classics of continental American and Mediterranean cooking. Each dish is a story of where I come from, what I’ve learned, and how food connects people across cultures.
Chicken Adobo with Java Rice
Tender chicken braised in soy sauce, vinegar, garlic, and bay leaves, creating the signature savory-sour flavor of the Philippines’ most beloved dish. Paired with fragrant java rice—stir-fried with butter, tomato, and spices—it’s a vibrant and satisfying combination that highlights both tradition and comfort.
Pad See Ew
A classic Thai street food favorite made with wide rice noodles stir-fried in a rich soy-based sauce. Balanced with tender chicken or any protein of choice and crisp Chinese broccoli, it captures a touch of sweetness and smokiness from the wok. Hearty, comforting, and flavorful, it’s tradition with every bite.
Chicken Tikka Masala with Roti
Grilled chicken marinated with spices, then simmered in a rich, creamy tomato-based sauce infused with garlic, ginger, and aromatic seasonings. Served with freshly made roti, it delivers smoky, savory, and comforting flavors in perfect harmony, offering a timeless and satisfying dining experience
